Easy Cast Iron Blackberry Blueberry Cobbler

Ingredients

  • 1 pint fresh blackberries & blueberries
  • 1 cup raw granulated sugar
  • 1/2 cup firmly packed unrefined organic brown coconut sugar Try Big Tree Farms
  • 1/2 cup plus 2 tablespoons of Bob's Red Mill Unbleached White All-purpose Flour
  • 2 tbsp fresh lemon juice from a lemon no lemon, no problem - use white wine
  • 1/2 tsp ground nutmeg
  • 1/4 cup Kerrygold grass-fed butter
  • 3/4 tsp aluminum-free baking powder
  • 1/4 tsp sea salt
  • 1/2 cup grass-fed milk

Instructions

  1. Place a 10-in cast iron skillet in the oven to preheat at 350 degrees

  2. In a medium bowl, stir together the berries, 1/2 cup of the sugar, coconut brown sugar, 2 tablespoons of flour, lemon juice or wine, and nutmeg

  3. Melt the butter in the skillet that's in the oven until browned around the edges and sizzling hot.

  4. While the butter is melting, in a large bowl, mix together 1/2 cup flour, 1/2 cup sugar, baking powder, salt, and milk just until combined. A few lumps left are okay.

  5. Pour batter into the hot skillet; do not stir. Immediately pour the berry mixture over the batter.

  6. Bake 30-35 minutes or until crust looks golden and crisp.
