Who can resist delicious, moist brownies? Not me. That’s why I make my own and a little healthier so I can enjoy them and not feel as guilty. Plus, my son loves them too! Not sure my husband does, but at least he tried them. He gave me that look!

Healthy Brownie Bites with Medjool Dates
When baking with ingredients such as flours, nuts, and dates, you want to make sure they are fresh. There’s nothing worse than using year-old flour that’s stuck in the back of the refrigerator or freezer. So, make sure your ingredients haven’t expired and are at their freshest state, mainly when you are serving others. The Medjool Dates from Thrive Market is what I used in my recipe. Everything I received surpassed my expectations.
I love finding healthier alternatives to some of my favorite desserts, including these healthy brownie bites! It’s my first time baking with Medjool Dates. This is also my first time tasting them. At first, I was eating one a day; then, I thought I’d better stop so I could make these delicious, moist brownies.

Healthy Brownie Bites with Medjool Dates Recipe
I use better-for-you ingredients in all my baking recipes. I hope you like (love) these brownies made with Medjool Dates. They are moist and scrumptious, so be careful when trying to eat just one!
Ingredients
- 1 cup Organic Medjool dates, pitted (about 12-14 large ones)
- 1 cup fresh hot water (for soaking the dates)
- 3/4 cup almond flour or any gluten-free flour
- 1/2 cup Organic Cacao Powder (more for icing) such as Navitas Organics
- 1/2 tsp aluminum-free baking powder
- 3 tbsp Organic Brown Coconut Sugar (unrefined & low glycemic Certified Fair Trade) by Big Tree Farms
- 1 tbsp coconut oil, melted
- 2 tsp pure vanilla extract
- 1 large egg
- pinch or two of sea salt
- a sprinkle of cinnamon, optional
- a handful of pecans, optional
Instructions

Preheat oven to 350 degrees. Line a 9x9 inch pan with parchment paper.

Place pitted dates in a medium bowl and pour the hot water over them. Stir and let sit for 10 minutes. Drain the water or reserve for icing (see below) and place the dates in a blender. Blend or pulse the dates until somewhat smooth making sure all large pieces have been blended. Make sure to scrape the edge of the blender each time you pulse.

Add the almond flour, cacao powder, baking powder, coconut sugar, melted coconut oil, vanilla, egg, and sea salt in the blender. Blend until smooth making sure to scrape the edges of the blender.

If adding pecans and cinnamon - place a handful of pecans on top of brownie mixture and lightly sprinkle the cinnamon or vice versa like I did.

Spread brownie mixture into prepared baking pan. Bake for 20 minutes. Cool before cutting.
Date Icing for your brownie bites

Take your reserved date water and add it to some cacao powder and melted coconut oil until you get the consistency you want for the icing.

After the brownies have cooled a bit, pour icing over them. Please note, I did not make the icing for mine.

For best results, store any leftovers (if any) in the refrigerator.
