Our 2020 blackberry bushes have given us fruit, so I bake! From the looks of the flowers, these bushes will produce way more blackberries than I can use. My neighbors will be happy. We’ve had a lot of rain so far this year, more than usual, I’ll be giving away blackberries this time next month.

If you live in North Texas, the Wild Berry Farm seems to be a very popular place to pick your own blackberries. Otherwise, the blackberries sold in grocery stores should be fresh since this is blackberry season.

Gluten-free Sweet Blackberry Quiche
This sweet blackberry quiche is so simple to make and it took all of 20 mins to prepare if that. If you don’t want blackberries in every bite, I suggest only put 3/4 cup of blackberries in your quiche.

Gluten-free Sweet Blackberry Quiche
No tartness in this quiche.
Ingredients
- 9" Wholly Wholesome Gluten-Free pie shell *do not cook the pie shell first
- 6 large cage-free eggs
- 1 cup almond milk
- One 5.3oz Greek vanilla yogurt
- 1 cup fresh blackberries
- 1 tbsp cinnamon-sugar mix Add 1/8 tsp of cinnamon to a tablespoon, then fill up the rest with raw sugar
- 1 tsp fresh thyme
- salt & pepper to taste
Instructions

Pre-heat oven to 350 degrees

Beat eggs in a large bowl with a fork or whisk until combined.

Add milk and yogurt and stir to blend.

Add cinnamon-sugar mix, thyme, and salt & pepper and whisk

Place blackberries in the bottom of the uncooked pie crust. Pour egg mixture over the blackberries.

Bake in center of oven 55 mins to 1 hr
My Gluten-free Sweet Blackberry Quiche was my own recipe, however, the Wholly Wholesome gluten-free pie crust was given to me to try out. I loved how it baked along with the quiche, and it tastes pretty good. I would definitely buy it to make other gluten-free meals.
I’ve made a few blackberry desserts in the last couple of years and I have to say, my Blackberry Clafoutis Dessert is the best. That’s my best dessert, but below are a few more.
