How to Make Chickpea Avocado Feta Salad
When you want all the foods you love in one bowl, you make this salad! Hands down, everyone in the family will love it too. I love a lettuce salad, but sometimes I just want something different. When I do, I make this healthy alternative feta salad.
Eating healthy is not that hard. Really. And, who said lettuce has to be an ingredient in a salad to be good and to be healthy? Not me. This salad is by far one of the best salads I’ve ever made. Believe it or not, my 10-year old ate a whole bowl of it and wanted seconds. That’s a win-win in my house.
Chickpea Avocado Feta Salad with Dressing Recipe
- One can of chickpeas (540ml) (18.26)
- Two medium avocadoes
- 130g (4.6 oz) Feta cheese, diced
- One cucumber
- sliced Kalamata olives – 1/2 cup
- red onion, diced – 1/2 cup
- yellow bell pepper, diced – 1/2 cup
- Three garlic cloves, minced
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- 1 tbsp oregano
- juice of ½ a lemon
- pinch of salt & pepper
Open and rinse chickpeas.
Wash and dice all the veggies.
In a large bowl combine chickpeas, avocadoes, feta cheese, cucumber, olives, onions & peppers; set aside.
In a separate bowl, make the dressing:
Combine the Greek yogurt, olive oil, oregano, garlic, lemon juice, salt & pepper, and whisk.
Pour the dressing over your salad mixture and mix gently until well combined.
Refrigerate your salad for at least 4 hours before serving. You want it well chilled.
Serve it alone or in an avocado salsa bowl with crackers or with your favorite meat dish.
